Bucatini Pasta – Organic

The name Bucatini comes from the Italian wordBuco, meaning hole as this pasta is similar to a thick spaghetti noodle with a hole running through the middle. Although Bucatini was popularized by Rome it was most likely created in Sicily. The shape allows for more even cooking of the pasta as well as room for sauce to nestle. This pasta can be found most often served with Amatriciana sauce, but is also heavenly served with butter sauces.

Olivelle’s pasta is made in the heart of Italy, by a fifth-generation, family-run company using the highest quality ingredients and century old, traditional methods. From farm to table, this pasta is produced with Italian Organic Durum Wheat Semolina and processed using artisan methods; bronze dye extruded, and air dried naturally over multiple days. While not the fastest way of making pasta, it is still the best and most authentic, lending to a rough, dense finish that has bite and holds any sauce beautifully. Because of the quality ingredients and craftsmanship when making this pasta, it is naturally high in folate, rich in protein, fiber; and has a lower glycemic index than regular wheat pasta.

• Bucatini with Amatricana Sauce

To prepare:

1. Bring 4-6 qt water to a boil and place one Pasta Rock or 1 Tbsp salt in water.
2. Let Pasta Rock boil with water for 1-3 minutes deepening on your salt preference an the size of the Pasta Rock
3. Remove Pasta Rock with slotted spoon; set aside for another use. Pasta Rocks can be used until they full dissolve.
4. Use salted water to cook pasta for 115-16 minutes uncovered. Drain and toss with your favorite EVOO.
