The Wsthof Universal Knife Sharpener can be adjusted to sharpen either standard or Asian-style blades. Each setting provides two stages of sharpening for a total of four stages.

First, operators can use a carbide sharpening slot to smooth irregularities and refine the angle of the blade edge. Next, the knife can be drawn through the ceramic sharpening slot to finish honing the blade to a refined, razor-sharp edge.

Because it can be swithced quickly between the standard and Asian setting, users don’t need to purchase multipe sharpeners to keep all kitchen blades in functional form.
